The sub-project Processing of table olive, supported by Italian and Syrian Government institutions, intended to promote table olive production in Syria. The main tasks have been the updating of state-of-art of raw and processed material production; a survey of main applied technologies and factories; the training of experts in processing and quality control of the table olive; the building of a new laboratory for the production of table olive. The state-of-art of raw and processed material production has been defined through a survey of the technologies used by the main Syrian Companies.

Le sous-projet Transformation des olives de table a été financé par les gouvernements italiens et syriens dans le but de relancer la production syrienne d'olives de table. Les priorités du projet sont les suivantes : mise à jour des données relatives à la production d'olives et à la technologie de transformation ; formation d'experts en matière de traitement et de contrôle de qualité ; construction d'un nouveau laboratoire de production d'olives de table. Enfin, grâce à une enquête sur les technologies présentes dans les principales entreprises syriennes, un état du matériel utilisé pour la production et la transformation des olives a pu être dressé.
